  3. Mix the softened butter with the minced garlic, thyme, rosemary, salt, and pepper until evenly combined.

  4. Loosen the breast skin with your fingers and spread about half the herb butter underneath the skin, then rub the rest over the outside of the chicken.

  5. Season the cavity with a pinch of salt and pepper, then stuff it with the lemon halves, smashed garlic, onion quarters, and parsley sprigs.

  6. Tie the legs together with kitchen twine and tuck the wing tips under the body so they don't burn.

  7. Place the chicken breast-side up on the rack, drizzle with the olive oil, and roast for 1 hour 15 minutes, until the thickest part of the thigh registers 165°F.

  8. Transfer the chicken to a cutting board, tent loosely with foil, and rest for 15 to 20 minutes before carving so the juices redistribute.
