  1. Combine the seasonings. Slice the chicken, pound to 1/2 inch, pat dry, and rub with 2 teaspoons seasoning.

  2. Heat oil in a skillet over medium-high and sear the chicken 4 to 5 minutes per side; rest, then dice.

  3. Add a splash of broth, then the onion, peppers, garlic, cilantro, lime, hot sauce, honey, and remaining seasoning; cook 2 minutes.

  4. Brush one side of each tortilla with butter. Place butter-side down, add 1/2 cup cheese and filling on one half, fold, and cook until golden.

  5. Cut and serve with sour cream, salsa, and guacamole.
